Also known as a conical strainer or Chiense strainer, it removes large pieces of food or fish bones from stock, or whole herbs and spices from soups for smooth results. The standard 1. 5mm perforations are suitable for straining most preparations. You can line the chinois with muslin for pip free jams and jellies, or for clarifying
